Recent Recipes

So I fully intended to post a Week In Review last week and then LIFE, you know? But the good news is I took notes and kept a list of the highlights to share to recap what's been going on lately! And then I realized that list was mostly good recipes as my best intentions for crafting kinda fell by the wayside...

I guess this isn't so much a week in review as it is a A Few Weeks Maybe I Guess Probably in Recipe Format. But you get the point.

To the good stuff!


Pioneer Woman Lasagna Roll Ups
Is there anything this woman can't do? I adore Ree Drummond (both her recipes and her show) and every recipe from her I've tried has been a hit! This is no exception.

I halved the recipe, which I usually have to do with hers since she has such a big family to feed and I'm usually in the 4 servings range, and I think that caused some issues.

The sauce was perfect and cooking the noodles was not a problem at all. The filling is where I think reducing the portions got a little wonky. Although I used cottage cheese instead of ricotta (it's what i had on hand) and threw in a bunch of other different types of cheeses instead of pure Parmesan, it still wasn't enough to get a good coating on the noodles. Anyway, I still highly recommend it!

White Chicken Chili
I found this recipe via Pinterest and thought it would be perrrrfect for the cold weather and snow we've been having lately in Minnesota!

The only substitution I made was instead of using the "Better than Bullion" base, I used the powdered chicken stock instead. I don't know if that was the reason, but my finished product was SUPER salty. Not to the point where it was unbearable, but it was definitely heavy on the salt. But don't worry, we still ate every last drop!

Skillet Chili
I found this recipe on All Recipes ages ago and I've made it countless times and I think I've finally tweaked it to the perfect combination for us! That's the great thing about All Recipes really - they're great recipes if you're looking for a new favorite to make your own. (Mostly you have to add more seasoning)

  1. Hi Lisa, just popping in from our SCS blog group! I love that your blog isn't just about cards. :) White chicken chili sounds delish. I've yet to make chili from scratch, since my hubby only eats chili if I make it into a chili dip, but this is one I might want to try even just for myself. We've been on a tight budget the last few months, so I'm using a lot of my freeze-dried foods and a recent favorite has been my 'not corned beef' hash. If you're familiar with freeze-dried foods, let me know if you'd like the recipe!
